Because apparently, we can’t survive on iced coffee alone.
Let’s be real — I cook most nights, but that doesn’t mean I always want to. Some evenings I’m channeling Ina Garten, and others I’m seriously debating if popcorn counts as a vegetable.
That said, I’ve got a few go-to healthy recipes that are in heavy rotation this week. They’re quick, satisfying, and don’t require seventeen dirty bowls or a food processor with 12 attachments.
If you’re looking to keep things healthy(ish) without losing your mind (or your appetite), here are three meals I’m loving right now.

🥗 1. Lazy Girl’s Lemon Chickpea Salad
Because cooking shouldn’t require sweat. Or pants.
What’s in it:
• 1 can of chickpeas (drained, because we’re not animals)
• Cucumber, tomato, and red onion (a.k.a. things that make it look like you tried)
• A squeeze of lemon, a glug of olive oil, and a sprinkle of feta if you’re feeling fancy
Why I love it:
It’s crunchy, tangy, and takes less than 10 minutes to throw together. Basically the culinary equivalent of dry shampoo — covers up a multitude of sins and looks way more impressive than it is.
🍝 2. Zucchini Noodles with Turkey Meatballs
A dish that screams “I go to Pilates”.
What’s in it:
• Zoodles (store-bought because no one is spiralizing their own zucchini, let’s be real)
• Ground turkey, garlic, onion, and whatever spices your soul tells you to add
• Marinara from a jar (judge me, I dare you)
Why I love it:
It’s low-carb but still gives that warm-and-cozy pasta vibe. And the meatballs? Chef’s kiss.
🍫 3. Chocolate Chia Pudding That Doesn’t Taste Like Sadness
Yes, it’s healthy. Yes, it’s actually good. No, I’m not lying.
What’s in it:
• Chia seeds (tiny, weird, full of fiber)
• Almond milk, cocoa powder, a splash of maple syrup
• Optional: top with fruit or dark chocolate chips if you want to pretend you’re on a wellness retreat instead of your couch
Why I love it:
It tastes like dessert but somehow counts as breakfast. Also, it sits in the fridge overnight doing its thing while you’re doing absolutely nothing. We love a low-effort queen.

Final Thoughts:
These recipes are keeping me fed, vaguely healthy, and marginally less feral. I can’t promise they’ll change your life, but they will make you feel like someone who owns matching Tupperware.
